1. Heat the oven to 400 degrees F.
2. Toss bread cubes with olive oil until lightly (but evenly) coated. Spread out evenly on a large baking sheet and toast in oven for 10-15 minutes or until golden brown and crisp. Set aside.
3. In a large bowl (large enough to hold all salad ingredients) whisk together garlic, Italian seasoning, mustard and red wine vinegar. Add tomatoes, mozzarella, basil and toasted bread to the bowl and toss gently to evenly coat/combine. Season with salt and pepper to taste.
